Aunt Berna's Reception Salad

Ingredients
1 package Lemon Jello
Juice from a large can of crushed pineapple

Leftover crushed pineapple from can
1/2 pint dream whip
1/2 cup celery (diced)
2 - 3 oz packages cream cheese
1/2 tsp salt
1/2 cup nuts

Boil pineapple juice and add jello.  Wait until it begins to gel.  Add mashed cream cheese to nuts, celery, salt, remaining crushed pineapple.  Pour in jello, fold in dream whip.  Pour into a greased jello mold. Chill


Grandma Jacobs Recipes

Aunt Pat:  "These are some of the cookies I remember my Mom making and I and Aunt Esther helping her. I also included an excellent Polish Cheese “Coffee Cake that is good as a dessert.  Hope you like them."


Date Pinwheel Cookies:


375 degree oven; bake 10 minutes

CREAM: ½ cup butter

ADD:    ½ cup light brown sugar,;  ½ cup granulated sugar;   ½ tsp vanilla;   1 egg

BEAT: til light

ADD:    2  cups flour; dash of salt;  ¼ tsp baking soda    Mix to form dough.  Chill til firm enough to be rolled.



Filling:  &  ¼ oz package of pitted dates  cut into small pieces  Place in pan with  ¼ cup sugar; dash of salt and 1/3 cup water.  Bring to a boil . Simmer 5 minutes.  Stir in1 cup chopped nuts. let mixture COOL


CUT: dough in ½  ; roll out each on floured wax paper into a 9 x 12 rectangle .  

SPREAD ½ of date mixture on top of each.  

ROLL: tightly from 9 “  end.  Wrap in wax paper and chill overnight

CUT/SLICE: into 1/8 “ thick slices. 

PLACE: on un-greased baking sheet

BAKE.



Filbert Crescents


350 Degree oven  for 10 to 12 minutes


CREAM: 2/3 cup butter with 2 Tbsp sugar  -  use fingers to blend til soft

ADD:  ¼ tsp almond extract and ¼ pound chopped or ground filberts( hazel nuts); and 1   2/3 cup flour.  

MIX:  til forms  dough.  
FORM:  into small balls, then roll to about 2 ½ “  long, then 

SHAPE: that into a crescent/ or quarter moon


When done baking and still warm dip into colored granulated sugar




Spritz Cookies


425 degree oven  for 12 minutes


CREAM:  together  ¾  cup butter and ½ cup sugar

ADD: 1  egg yolk  -  BEAT  well

ADD:  ¼ tsp salt; 1  tsp vanilla, 2 cups flour  - 

MIX:  well  

PLACE: dough into a cookie press

PRESS: press desired shape onto baking sheet   -  

sprinkle with colored sugar of your choice 

BAKE.




Prague Tea Squares


BAKE:   350  degree oven for 40 to 45 minutes, 


MIX: together  ¾  cup butter and 1 cup sugar

ADD:  1  egg; 1 tsp vanilla -  mix well

STIR  IN:   2 cups flour; ¼ tsp ground allspice;  1  cup chopped almonds

SPOON:   ½  of mixture into 9 “ square pan.  

SPREAD:   1/2 cup jam  ( seedless Raspberry or other) over top.

TOP:  with remaining dough.. 

BAKE: til lightly brown.

SPRINKLE:   with 10x (powdered sugar) when cooled.  

CUT:  into 36 squares



Lemon Snowballs


350  degree oven for 10 minutes or according to size, so light brown on bottom


MIX:   ½ shortening; 2/3 cup sugar; 1 egg; 1 tsp grated lemon rind

STIR IN:  1 tblspn  water and  3  tbsp strained lemon juice

SIFT TOGETHER:  1   ¾ cup sifted flour;  1 tsp baking soda; ¼ tsp cream of tartar; ½ tsp salt

along with ½ cup finely chopped nuts.  

FORM: dough into small balls about 1 “ size

PLACE: on non-greased cookie sheet   

BAKE: Remove from pan and roll in 10 X sugar( Confectioners or powdered)



Kris Kringle Cookies 


CREAM together :  1 cup butter and 2 cups  granulated sugar

ADD:   1  tsp vanilla; ½ tsp baking soda dissolved in 2 Tbsp milk; 3  eggs   

BEAT.

ADD:  1  to 2  tsp anise oil ( Mom always used anise in these cookies but is optional)

ADD dry ingredients:  1 tsp salt; 1  ½ tsp cream of tartar; 5 cups flour starting with 3 cups of the flour and gradually add up to 5 cups. To make a dough that can be rolled

ROLL: dough to desire thickness and cut into desired shapes with cookie cutters.

BAKE:  400 degree oven    8  to 15 minutes depending on thickness

ICE: and decorate as wish.



Molasses or Dark CutOut Cookies


POUR: ¼  cup boiling water over ½ cup butter or margarine in a  large mixing bowl 

BEAT IN: ½ cup brown sugar and ½ cup dark molasses.  

SIFT  TOGETHER: 3 cups flour; 1 tsp salt; 1 tsp baking soda; 1  ½  tsp ginger; ½ tsp cinnamon; ½ tsp allspice; and ¼ tap  ground cloves. 

ADD: sifted ingredients to molasses ingredients.  

CHILL.  

ROLL: dough out 1/4” thick on floured board and cut into desired shapes.

BAKE:  on lightly greased sheet in 375 degree oven for about 10 minutes. 

DECORATE: with sugar frosting,etc  

Makes about 3  ½ dozen cookies



Coral Island Cookies


SOFTEN: 2/3 cup margarine softened.  

ADD:    1/3  cup sifted light brown sugar 1 tsp almond extract

CREAM: throughly.  

ADD: 1 egg yolk ( reserve white for use later in recipe).

BEAT: well.  

ADD:  1  1/3 cup sifted flour( use more if necessary). 
SHAPE: dough into small balls  _  ¾ “.  

BEAT:  egg white slightly and dip top of each ball into egg white.  

DIP:  into finely chopped walnuts or pecans. 

PLACE: nut side  up on baking sheet and press thumb in center to make a small depression.   

PLACE: a small amount of red jam into the depression

BAKE:  350 degree oven for about 18 minutes or until firm. 

LIFT: cookies carefully to rack to cool




Rum Balls


MIX: together thoroughly: 2 cups vanilla sugar wafer crumbs,1 cup peans, finely chopped,1 cup confectioners( 10 X) sugar, 2 tbsp cocoa( baking),2 tbsp white corn syrup,1/3 cup rum or brandy

SHAPE: into 1 “   balls and roll in confectioners sugar or dry cocoa. 

STORE: in tightly covered container for up to 3 or 4 days before serving



Sour Cream Cookies


PLACE: in blender:  1  cup soft butter; 2 cups light brown sugar; 1 egg; 1 cup sour cream and1 tsp vanilla.  

BLEND: to a soft creamy texture.  

SIFT: together: 4  ½ cups flour 1 tsp baking powder; ½ tsp baking soda; and ¼ tsp salt.  

ADD: this to creamy mixture that has been placed in a bowl.  

STIR: til blended. 

CHILL. 

ROLL: out dough on floured board. 

SPRINKLE: with sugar. 

CUT: into rounds

BAKE: 375  degree oven  for 10 to 12 minutes or ti lightly browned


Coral Island Cookies


2/3 cup margarine or butter - Softened

Add 1/3 cup light brown sugar

Add 1 tsp Almond Extract

Add 1 egg yoke

beat well

Add 1 1/3 cup sifted flour

Shape dough into 3/4 inch balls

Beat egg white slightly abd dip to of each ball into egg white

Dip top into finely chopped Walnuts or Pecans

Place nut side up on cooking sheet and press thumb in center to make small depression

Place a small about of red jam into depression

Bake at 350 for 18 minutes

Left cookies carefully to rake and cool


Rum Balls


Mix together thoroughly

2 cups vanilla wafer crumbs

1 cup finely chopped pecans

1 cup confectioners shuar

2 tbps cocoa

2 tbsp white core syrup

1/3 cup rum or brandy


Shape into 1" balls, roll in confectioners sugar or dry coca.  Store in tightly covered containers for up to 3 - 4 days before serving


Sour Cream Cookies


Place in blender

1 cup softened butter

2 cups light brown sugar

1 egg

1 cup sour cream

1 tsp vanilla

Blend until soft and creamy texture

Sift together 4 1/2 cups flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

Add to creamy mixture

Stir til blended then chill

Roll out dough on a flour board, cut out round shapes

bake 375 for 10 - 12 minutes


Chrusciki or Crullers or Angel Wings


4 egg yolks

3 tbsp powdered sugar

1 tbsp vinegar** (into oil)

1 cup flour

1 tbsp whiskey or brandy or rum

1/8 tsp salt

1 whole egg

1/2 tsp vanilla


Cream together all ingredients except for flour

Add flour until a soft dough is formed that can be rolled

Roll thin cut into strips about 4 by 2 inches

Cut a slash in the center of each strip and pull one end through making a twist

Fry in deep fat until brown

Drain on a paper towel

Sprinkle with confection sugar


Note - add into 1 tbsp of vinegar into fat keeps it from smoking. 



Pineapple Squares


Crust 

4 cupa flour

10 tbsp water

2 tsp salt

1 1/3 cup crisco

1 egg (mixed)


Sift Flour, add salt, cut in Crisco into peas,  Mix water with egg and sprinkle onto flour mixture til dough holds together
cut in 1/2 roll dough onto two 12/16 baking sheets

Filling
In a pan bring to boil stirring constantly
1 can crushed pineapple without juice (save for later)
1/2 cup water
1/4 cup sugar
3 tbsp cornstarch

Cool then place on top of crust.  Cover with second crust
Bake at 350 for 45 minutes
Cool then frost 1/4 cup butter, 1 cup confectioners sugar
1 tbsp pineapple juice and 1 tsp vanilla


PECAN PIE BARS

Preheat oven 350 degrees.  
Spray 15 by 10 baking sheet
In a large bowl beat 2/12 cups flour with 2 sticks butter, 1/2 cup sugar, and 1/2 tsp salt until 
resembles fin crumbs.  Press into baking pan and bake 20 - 23 minutes
Top with filling , in a large bowl:  Beat 4 eggs, 1 1/2 cup Karo syrup, 3 tbsp melted butter, 1 1/2 tsp vanilla
Beat well then add 2  1/2 pecans halves or chopped .  Pour over hot crust then bake for 25 minutes until filling is firm around edges and slightly firm in center.  Cool.  Cut into 2 by 1 1/2 bars.  

LEMON SPRITZ

1 cup butter
3 Oz Cream Cheese
1 cup sugar
1 egg yolk 
1/4 tsp cinnamon
1/2 tsp lemon extract
1 tsp lemon rind
2 1/2 cups sifted flour
1 tsp salt

Cream Butter and Cream Cheese together 
Add sugar then beat in egg yolk
Add flour, lemons, salt and cinnamon
Put through cookie press
Bake at 350 for 12 - 15 minutes. 

Mexican Wedding Cake

1 cup butter
1 tsp vanilla
1 cup chopped nuts (pecans or walnuts)
3/4 cup  sugar
2 cups flour
 
Cream Butter and Sugar
Add vanilla 
Stir in flour
Add nuts
Shape into 3/4 balls
Bake at 350 on ungreased pan for 12 - 15 minutes
Roll in confectioners sugar

4th of July Cookies
(From Aunt Dories mother in law) 

2 cups granulated sugar
1/2  cup shortening
2 eggs
2 tsp soda in 1 cup sour milk
2 tsp baking powder in 4 cups flour
pinch of salt
1 tsp vanilla
1 tsp lemon juice

Mix everything together.  Drop from a teaspoon.  Bake at 400 degrees for 10 -12  minutes
let cool and from with 1 box powdered sugar, mixed with milk.  Add cocoa to 1/2 of the frosting and from 1/2 cookie white, 1/2 cookie chocolate. NOTE: to make sour milk att 1 1/2 tsp vinegar to 1 cup milk. 



Carolina Pound Cake

Cream 1 cup butter
add 1 3/4 cup sugar, 5 eggs (one at a time) 
Beat well
Stir in 1 tbsp boiling water with 2 cups of cake flour (regular flour siffted minus 1 tbsp = cake flour)
Add a pinch of salt 
Add 1 tsp vanilla and 1/2 cup nuts
Beat for 5 minutes
Bake in greased loaf pan with parchment paper
325 for 1 hour 20 minutes.
Cool then sprinkle with powdered sugar. 


Old Fashioned Coffee Cake

Blend together 1 cup butter and 1 1/4 cup sugar 
Beat until light and fluffy
Add 1 tsp vanilla and 2 eggs (one at a time)
Blend in 1 cup sour cream
Add 2 cups sifted flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt

Spoon 1/2 batter into greased bundt
Sprinkle on 1 cup of chopped nuts, 1 tsp cinnamon 2 tbsp sugar
Add rest of batter
Cut through with a knife
Bake at 325 for 45 - 50 minutes and check to make sure it is done
Cool 10 minutes
top with a glaze (optional)



Cream Cheese Coffee Cake (called Polish Cake by some)

Bake at 350 for 45 minutes 

Spray a 12 by 9 inch pan

Filling:
16 oz cream cheese
1/2 cup sugar
1 tsp vanilla
1 egg
mix together and set aside to use later

Dough:
3 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 cup butter softened
2 eggs
1 cup sour cream
1 ts[ vanilla
1 cup sugar

Sift/Mix dry ingredients.  Cream sugar, eggs, butter, then vanilla.  Add dry ingredients, creamed ingredients and sour cream.  Pour 1/2 dough into pan.  Top with filling, then carefully spread the rest of the dough on top. Sprinkle on streusel mixture of 1/4 cup sugar, 1/2 cup flour, 3 tbsp butter (softened). Bake.  You can also use a bundt pan. Bake 1 hour 15 minutes.  



Buttermilk Coffeecake/ Placek

This is very similar to the one grandma made, but it does not have yeast.  It tastes the same and stays fresh longer.  Aunt Dorie used this recipe and all thought it was Grandma's yeast one.  

Makes two loaves - do not substitue any of the ingredients or it will not turn out.

MIX BY HAND

BAKE 350 degree over for 1 hour.  Do a toothprick text, if it is clear - it's done.  Otherwise bake for 5 - 10 minutes longer.  

Cream Together 
1 stick butter
2 cups sugar
2 large eggs or 3 medium

Add dry ingredients
1 tsp salt
2 tsp baking powder
1 tsp baking soda
4 cups flour

Add gradually with dry ingredients
1 tsp vanilla
2 cups buttermilk

Optional ingredients
1 cup raisins or combination of raisins and chopped dates
1/2 cup chopped walnuts

Divide dough into two greased loave pans, Sprinkled with crumbs

Crumbs
1 stick butter
1/2 cup sugar
1 cup flour
Mix together into small peas shape. 

Mushroom Soup

Grandma like to make this every time she cooked fresh polish sausage but usually at Easter and Christmas

Retained Broth from cooking fresh polish sausage
Soak and wash dried mushrooms or saute fresh mushrooms in butter
Add 1 medium onion diced
1 tsp mincd garlic
1/2  cup of barley
Salt and Pepper 
1 or two large carrots thinlu sliced

Cook 1 hour til barley and carrots are done
Make a sauce of one egg yolk and 1 tbsp flour to thicken soup
Add white vinegar to taste
 Cook a few hard boilded eggs and slice thinly into the soup.
