Whiskey French Toast

Ingredients
6 Eggs
1/4 cup milk
1 teas vanilla
1/3 cup whiskey
1 - 2 baguettes

Whisk eggs, milk, vanilla, whiskey in a bowl. Slice baguettes into 1 inch slices.  Place in a 8 by 8 pyrex.   Pour liquid mix over, cover and let soak in overnight.  Next day, toast in a hot buttered pan till brown on both sides, then place back in pyrex 8/8 dish and bake at 350 for 20 minutes.


George's nuts

1pt. sour cream

3 1/2 cups brown sugar 

2 TBs instant coffee with water to mix 

Mixed together in saucepan... cook slowly to softball stage (234 degrees) then add 1 tsp. vanilla and enough broken walnuts (to your liking)... beat until creamy/firm and cool on waxed paper.


Panuche fudge

In a saucepan over medium heat stir together:

2 cups packed brown sugar

2 cups sugar

1 cop milk 

Stir occasionally to softball consistency (234 degrees). Remove from heat and beat 3 TBs butter and 1tsp. vanilla, then pour into buttered pan too cool.


Burnt Sugar Cake

Cake ingredients 

2 1/2 

2 tsp baking powder

1/2 tsp salt

1/4 cup packed brown sugar

1 1/4 cups hot water

1/4 cup shortening

1/4 cup butter

1 1/2 cups sugar

3 eggs

Grease and lightly flour to/8 in round baking pans set aside. 

In medium mixing bowl combine flour baking powder and salt set aside. 

In a cast iron skillet heat brown sugar over medium heat about 5 minutes or until sugar melts and turns deep golden brown, stirring constantly, then remove from heat. 

into the pan stir one quarter cup of the hot water return to heat and continue stirring about two minutes or till mixture is free of clumps stir in remaining water and set aside. 

In a large mixer bowl beat shortening and butter with electric mixer on medium speed for 30 seconds or until softened. Add sugar and beet until well combined.

Add eggs, one at a time, beating well after each. Add the flower mixture and brown sugar mixer alternately to the beaten mixture-beating on low speed after each addition until just combined. Divide and spread evenly in prepared. 

Bake in a 350° oven for 25 to 30 minutes or till a toothpick inserted in the center comes out clean. Cool on racks for 10 minutes then remove cake from pans and cool completely. All that is left to do is to frost your cake. 


Burnt sugar icing

 1/2 cup sugar in a cast iron skillet and cook, stirring, over medium heat till melted. Add 1/3 cup boiling water and stir till a syrup forms. Bad two cups of sugar and one cup of milk cooked and stir to soft ball stage (234 degrees). Remove from a heat, add a half a cup of butter, a pinch of salt, 1 tsp. vanilla then beat with an electric beater until thick and easily spreadable. If the icing is too stiff just add in a little  milk.



Jessica’s Quinoa Salad

Ingredients 

3/4 cup dry quinoa

1/2 cup EVOO 

3 TB balsamic or red wine vinegar 
4 plus cloves garlic, minced 

 1/2 + tsp basil 

1/2 + thyme 
Salt and pepper 

1 1/2 cups baby or chopped arugula 

 1/2-1 can garbanzo beans 
 1 red pepper, chopped 
1 1/2+ cups kalamata olives, pitted 
1 feta cheese, crumpled 
1/2 red onion, chopped 

Directions

Prepare quinoa 

Dressing: 
Mix  EVOO,
 vinegar garlic, basil thyme  Salt and pepper 

Then

Mix cooled quinoa with arugula, garbanzo beans,red pepper, olives, feta cheese,red onion, and Dressing 





Hot Honey Shrimp
 ( or chicken, tofu) 

Ingredients

1/4+ lb shrimp (protein) 
Toasted sesame oil 

Lime

2 TB honey 
1 TB soy sauce 

2 TB butter 

 1 1/2 TB hot sauce or siracha 
1 1/2 tsps. garlic, minced 
1 1/2 tsps. ginger, grated or minced 

 red pepper flakes  


Directions 

Flash fry in small batches of shrimp in sesame oil and lime, set aside.

Bring to boil in small skillet. Honey, soy sauce, butter, hot sauce, garlic, ginger,and pepper flakes. Can add goat cheese. Add shrimp and serve 




Easy Pad Thai 

Ingredients
1 package flat pad Thai noodles 
Sesame oil 
8 ounces Shrimp, chicken or tofu or pork
2 eggs
1 cup cut up red bell pepper
1/2 cup dry roasted peanuts
1 cup fresh bean sprouts

Sauce
2 Tb fish sauce
2 Tb soy sauce
3 Tb brown sugar
2-4 Tb tamarind paste 
1Tb sriracha
2-3 Tn creamy peanut butter
3+ garlic cloves minced 

Garnish
1/2 cup cilantro
Green onions
Lime wedges 
Soy sauce 

Directions 
 Soak 1/2+ package of flat rice Pad Thai noodles in boiling water 10-12 minutes, rinse with cold water. 
In a wok: 
 Heat:  3TB toasted sesame oil 
Add: Shrimp, chicken (any protein).  Cook 1-2 minutes for shrimp, 3-6 for chicken, tofu ,  6+ for pork 
Scramble 2 eggs - set aside. 
Add some oil and red bell pepper, peanuts, bean sprouts, Drained noodles, and sauce.Garnish with 1/2 cup cilantro, green onions, lime wedges.TB soy sauce 




Kahlua

Combine all ingredients in a saucepan:

2  80-proof vodka

2 cups water

1 1/4 cups sugar

1 1/2 TBS vanilla

1 1/2 TBS instant coffee

Cover and cook over medium heat, stirring occasionally, until sugar has completely dissolved. Remove the mixture from the heat and let it cool be sure to keep it covered preferably in a colored glass container.
